What You Need to Know

Chimichurri is an Argentinian herb sauce made with large amounts of garlic, parsley, olive oil, vinegar, and sometimes chili. The garlic concentration is particularly high compared to other condiments — a tablespoon of chimichurri may contain as much garlic as an entire clove or more. Garlic is 3-5 times more toxic than onions by weight. The parsley in large amounts also raises oxalic acid concerns. Never give dogs chimichurri.
