Caesar salad was invented in 1924 in Tijuana Mexico by Italian immigrant Caesar Cardini who ran a restaurant on both sides of the US-Mexico border. The original recipe did not include anchovies — Cardini reportedly opposed their addition. The dressing was made tableside in the original restaurant as a theatrical presentation. The Caesar salad became internationally famous after Hollywood celebrities frequented Cardini's restaurant.

What You Need to Know

Traditional Caesar dressing uses raw garlic as a primary flavoring ingredient — the garlic is emulsified into the dressing giving it characteristic flavor. Commercial Caesar dressings use garlic powder and sometimes garlic paste. The garlic content in Caesar dressing is high enough to represent real Allium toxicity risk. The high fat from olive oil egg yolk and cheese creates additional pancreatitis risk. Caesar salad left accessible presents the same risks as the dressing alone.
