Persian lime juice — the most common commercial lime juice — contains approximately 8% citric acid by weight compared to lemon juice at approximately 5-6%. This makes lime juice significantly more acidic than lemon juice by concentration. The higher citric acid content also means stronger psoralen and essential oil effects. Mexican cuisine uses lime extensively — the tradition of adding lime to tacos salsa and guacamole is so established that lime is considered indispensable to Mexican cooking.

What You Need to Know

Lime juice carries the same concentrated toxicity as lemon juice — highly acidic with psoralen compounds.
