Brown rice retains its bran and germ layers making it a whole grain — white rice has these removed. The bran layer gives brown rice its tan color and contains most of its fiber vitamins and minerals. Brown rice takes approximately twice as long to cook as white rice because water must penetrate the outer bran layer before the starch can absorb moisture and soften.
