Did you know?

The term whitefish is used inconsistently across different cuisines and countries — in North America it often refers specifically to lake whitefish while in European cooking it refers to any lean white-fleshed fish including cod haddock and pollock. The white color of fish flesh comes from low myoglobin content — the protein that stores oxygen in muscles. Active swimming fish like salmon need more myoglobin making their flesh red. Bottom-dwelling fish like flounder and flatfish that move less have white flesh.
