Beef heart is technically a muscle meat rather than an organ — it is composed of cardiac muscle and has a different nutritional profile from liver. It is very high in taurine coenzyme Q10 B vitamins and iron. Taurine is particularly relevant given the FDA DCM investigation into taurine-deficient diets.
